    The Best Berry Salsa (with Elote Corn!)

    This berry salsa is a CROWD PLEASER. Every time blueberry season comes around it is time to break out this recipe.

    With only 5 ingredients this easy berry salsa recipe takes no time to make. It's healthy, simple, and made from real ingredients.

    I have been making this berry corn salsa recipe for years and every summer people are begging for it at every event! It is perfect for a beach day or backyard barbecue.

    What do you need for this berry salsa?

    • Corn: I prefer to use the frozen roasted corn from Trader Joes - but you could use fresh roasted corn or canned corn.
    • Fresh blueberries: frozen berries won't work for this recipe
    • Diced Red Onion: red onion is great because it will slightly pickle with the acidity of vinegar and Iime juice
    • Red Wine Vinegar: adds sweetness and acidity

    Variations:

    This simple pico salsa would be great with the addition of black beans, cotija cheese, or fresh cilantro

    Dietary restrictions:

    This pico is naturally vegetarian, dairy-free and gluten-free

    How to make:

    Allow the Trader Joe's Frozen Roasted Corn to thaw.

    Stir all the ingredients in a large bowl, sprinkle with a little salt and serve with tortilla chips.

    How long does this roasted corn pico last?

    This lasts about a week in the fridge... if it even makes it home from a party!

    Ingredients
      

    • 1 cup corn thawed, previously frozen roasted elote corn
    • 1 cup fresh blueberries
    • ½ diced red onion
    • 1 tbsp olive oil
    • 1 ½ tbsp red wine vinegar
    • 1 lime juiced

    Instructions
     

    • Add the corn, blueberries, and onion to a bowl.
    • Drizzle with olive oil, vinegar, and then lime juice.
    • Stir and serve with tortilla chips!

      Wow! Who knew that the combo of black beans and blueberries could be so dynamite, Loved, loved loved this salsa! And it was so easy to make!
