What do you need for this berry salsa?
- Corn: I prefer to use the frozen roasted corn from Trader Joes - but you could use fresh roasted corn or canned corn.
- Fresh blueberries: frozen berries won't work for this recipe
- Diced Red Onion: red onion is great because it will slightly pickle with the acidity of vinegar and Iime juice
- Red Wine Vinegar: adds sweetness and acidity
Variations:
This simple pico salsa would be great with the addition of black beans, cotija cheese, or fresh cilantro

How to make:
Allow the Trader Joe's Frozen Roasted Corn to thaw.
Stir all the ingredients in a large bowl, sprinkle with a little salt and serve with tortilla chips.

Ingredients
- 1 cup corn thawed, previously frozen roasted elote corn
- 1 cup fresh blueberries
- ½ diced red onion
- 1 tbsp olive oil
- 1 ½ tbsp red wine vinegar
- 1 lime juiced
Instructions
- Add the corn, blueberries, and onion to a bowl.
- Drizzle with olive oil, vinegar, and then lime juice.
