How to make Taco Cabbage and Ground Turkey Soup

  1. Sauté the onion and bell pepper in a large pot for about 2 minutes, until slightly softened.
  2. Add the ground turkey and cook until browned, breaking it up as it cooks.
  3. Stir in the diced tomatoes, tomato paste, chicken broth, and apple cider vinegar. Bring to a boil.
  4. Add the chopped cabbage, reduce heat to a simmer, and cook for about 5 minutes.
  5. Taste and adjust seasoning as needed.

Tips and Notes

This soup thickens slightly as it sits

Cook the cabbage longer if you prefer it very soft

For a little crunch, keep simmer time closer to 5 minutes

Ingredients
  

  • ½ head of green cabbage
  • 1 lb. ground turkey
  • 1 packet barbacoa seasoning
  • 1 tablespoon tomato paste
  • 15 oz can diced tomatoes
  • 1 ½ cups chicken broth
  • 1 tbsp apple cider vinegar
  • ½ diced white onion
  • 1 diced bell pepper

Instructions
 

  • Prepare vegetables by loosely chopping cabbage, diced onion, and bell pepper.
  • In a large greased pan on medium heat sauté onion and bell pepper for about 2 minutes, add ground turkey and cook until brown.
  • Pour in broth, tomatoes, tomato paste, barbacoa seasoning and apple cider vinegar and turn heat on high.
  • Once boiling add chopping cabbage and simmer for 5 minutes.
  • Serve with a dollop of greek yogurt.
