Baked Greek Fries (with feta and lemon!)
This Baked Greek Fries recipe is the perfect side dish for an easy weeknight dinner. What I love about this Sheet Pan Recipe is that it takes simple pantry ingredients and turns them into something incredibly flavorful and satisfying.
I’ve been making these for years when I want something a little more exciting than regular roasted potatoes, and they make great leftovers too. They’re easy to switch up depending on what you have on hand, and they pair perfectly with everything from grilled chicken to side to a salad or burger.

Healthy ingredients
Made with real potatoes, heart-healthy oil, and flavorful spices.
Versatile meal
Serve them as a side dish, snack, or even as the base of a Mediterranean-style bowl.
What you need:

- Yukon Gold potatoes – These potatoes roast beautifully and get crispy on the outside while staying creamy on the inside.
- Za’atar seasoning – A flavorful Middle Eastern spice blend typically made with thyme, oregano, sesame seeds, and sumac that gives these fries their signature flavor.
- Avocado oil – Ideal for roasting at high heat and helps the fries get crispy.
- Lemon – A squeeze of fresh lemon brightens the flavors and balances the savory seasoning.
- Feta cheese – Optional but adds a salty, creamy finish that makes these fries extra delicious.
Substitutions and Variations
Use different potatoes:
Small red potatoes work great if you want to make roasted za’atar potatoes instead of fries.
Add garlic:
Toss the fries with garlic powder before baking for extra flavor.
Make them spicy:
Add a pinch of crushed red pepper flakes.
Make them dairy-free:
Simply skip the feta.
Add herbs:
Fresh parsley or dill makes a great garnish.
How to make Baked Greek Fries:

- Cut Yukon Gold potatoes into fry-shaped wedges.
- Soak in warm water.
- Drain water and toss in oil and seasoning.
- Spread fries in a single layer on the sheet pan and bake.
- Remove from the oven and squeeze fresh lemon juice over the fries.
- Top with crumbled feta and serve immediately.
Tips and Notes
- Cut fries evenly so they cook at the same rate.
- Don’t overcrowd the pan — space helps them crisp up.
- Use high heat for the best roasted texture.
- For extra crispiness, broil for the last 2 minutes.
