What do you need:
- Kefir- I used the lemon flavor kefir but you could use plain or vanilla
- Vanilla Pudding- I like to use a sugar free kind
- Whipped topping- is optional if you want to make it dairy free- but I love the additional creaminess!
What do you dip in this pudding?
- I love to use a graham cracker or vanilla wafer, make sure to buy gluten-free versions if you need that.
- To keep this lemon dessert low carb you could use thin apple slices or strawberries.
- This is also great served as is with a spoon.
How to make:
- Start by making pudding with Kefir and allow to set.
- Stir in lemon juice and zest.
- Whip in the whipped topping.
How long does this last?
This lemon pudding will last about 4 days in the refrigerator. I do not recommend freezing this dessert.

No Bake Lemon Dessert
Ingredients
- 1 package instant sugar free vanilla pudding
- 1 ½ cup Lemon or Vanilla Kefir
- 1 lemon
- 1 cup whipped topping
For dipping
- 1 box graham crackers or vanilla wafers
Instructions
- In a large mixing bowl, whisk together kefir and pudding mix.
- Allow to set for 5 minutes.
- Stir in juice and zest of 1 lemon.
- Allow to set for 5 minutes.
- Stir in the whipped topping and serve.
