    No Bake Lemon Dessert

    This no bake lemon dessert is a lightened up dessert that's easy to make and naturally gluten-free. It tastes like an easy lemon meringue pie but as a dip! 

    You can prepare this in 10 minutes with just ingredients.

    Over the Spoon for:

    • A healthy dose of probiotics from kefir
    • A gluten-free lemon meringue
    • An easy no bake lemon dessert

    What do you need:

    pudding, kefir, and lemon slices
    For additional creamy flavor, you will also need some whipped topping
    • Kefir- I used the lemon flavor kefir but you could use plain or vanilla
    • Vanilla Pudding- I like to use a sugar free kind
    • Whipped topping- is optional if you want to make it dairy free- but I love the additional creaminess!

    What do you dip in this pudding?

    • I love to use a graham cracker or vanilla wafer, make sure to buy gluten-free versions if you need that.
    • To keep this lemon dessert low carb you could use thin apple slices or strawberries.
    • This is also great served as is with a spoon.

    How to make:

    • Start by making pudding with Kefir and allow to set.
    • Stir in lemon juice and zest.
    • Whip in the whipped topping.

    How long does this last?

    This lemon pudding will last about 4 days in the refrigerator. I do not recommend freezing this dessert.

    Is this lemon dessert gluten free?

    Yes! Just make sure you use gluten free crackers or cookies to dip into it.

    Is this healthy?

    This no bake lemon dessert is low in sugar, calories, and has added probiotics to make it a great light dessert.

    What does this taste like?

    It tastes similar to a lemon cheesecake or lemon meringue pie but as a dessert.

    Is this dairy free?

    No, this is made with Kefir which is a tart and tangy fermented milk. It is like a drinkable yogurt full of probiotics, protein, calcium and Vitamin D.

    Ingredients
      

    • 1 package instant sugar free vanilla pudding
    • 1 ½ cup Lemon or Vanilla Kefir
    • 1 lemon
    • 1 cup whipped topping

    For dipping

    • 1 box graham crackers or vanilla wafers

    Instructions
     

    • In a large mixing bowl, whisk together kefir and pudding mix.
    • Allow to set for 5 minutes.
    • Stir in juice and zest of 1 lemon.
    • Allow to set for 5 minutes.
    • Stir in the whipped topping and serve.
