Baked Greek Fries (with Lemon and feta!

Ingredients

  • 2 lbs. Yukon Gold Potatoes
  • 4 teaspoons Za'atar seasoning
  • 1 teaspoon salt
  • ½ teaspoon garlic powder
  • 2 tablespoons avocado oil (or oil of choice)
  • ½ cup feta cheese optional
  • 1 lemon

Instructions

  • Preheat oven to 425 Fahrenheit.
  • Cut potatoes into about ¼ inch french fry pieces and soak in a large bowl of warm water for at least 30 minutes.
  • After soaking, drain potatoes and return to the large bowl.
  • Cover potatoes in oil and toss with 3 tsp. of Za'atar seasoning, garlic powder, and salt.
  • Grease a sheet pan and lay out an even layer of seasoned potatoes.
  • Cook for 25-30 minutes, tossing halfway through.
  • Add feta and broil for 3-5 minutes and then drizzle with lemon juice before serving.
