This instant pot pork shoulder recipe (or pork butt) is the perfect pulled pork recipe that is ready in less than 2 hours! The meat just fallllllls off the bone and it SO juicy.
It is made in the instant pot (or pressure cooker) and can be used so many ways. I love having pulled pork on hand as a protein that you can use so many different ways. My favorite meals to make are pork tacos, carnitas bowls, tossed in barbecue sauce, or over a salad.
Pork shoulder is an affordable meat that usually has a long cook time in the slow cooker.. the instant pot cuts down the cooking time & delivers delicious results!

What do you need from the grocery store:
- A whole pork shoulder (pork butt) - be sure to get boneless pork shoulder or HALF bone in shoulder to that it can fit in your instant pot
- This recipe is for a 7 pound but but you could cut the recipe in half for a smaller size.
- I wouldn't get larger than that to ensure it will fit in your instant pot
- Spices such as garlic powder, chili powder, and cumin to make a dry rub
- I prefer a lower sugar pork but if you want to add a touch of sweetness you can add brown sugar to your rub.
- Apple Cider Vinegar
- Lime
Substitutions:
No lime? Try another citrus such as orange or grapefruit
No Apple Cider Vinegar? Use apple juice diluted with water
How to make Instant Pot Pork Shoulder:
- On a large cutting board trim fat from pork shoulder and cut into quarters.
- Season with dry rub mix.
- Set instant pot to sauté mode and brown pork on each side, remove and set aside.
- Deglaze instant pot by pouring in water, vinegar and lime juice.
- Add pork shoulder back in instant pot.
- Pressure cook on high for 90 minutes.
- Hit cancel and allow to natural release for 10 minutes, then quick release.
- Remove pork, shred the meat, and serve!
Hot tip: If you want crispy pork, spread shredded pork on a sheet pan and broil on low for about 5 minutes.
Wonderful ways to serve shredded pork:
- As tacos in tortillas with cilantro and pickled onions
- Make a rice bowl with black beans and salsa verde.
- Make a perfect pulled pork sandwiches by tossing the pork in your favorite BBQ sauce and serve over a sweet potato or in a bun.
Store the meat in a microwavable container as it is normal for the fat on the pork to solidify when you refrigerate it. Just microwave and stir the flavorful juices when you are ready to eat it the next day.
This lasts for 4-5 days in the refrigerator or freeze leftovers.

Ingredients
- 7 lbs. pork shoulder
- 2 ½ tsp cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 ½ tsp chili powder
- 1 tsp oregano
- 1 tsp salt
- 1 tsp pepper
- ½ cup water
- 2 limes
- ¼ cup apple cider vinegar
- ½ cup water
- 2 tablespoons avocado oil
Instructions
- In a small bowl, mix all spices.
- Trim the excess fat off of pork shoulder and cut into quarters.
- Evenly season the pork with spice mixture.
- Set instant pot to sauté mode, grease with oil and brown pork on each side, remove and set aside.
- Hit cancel and deglaze instant pot with water, vinegar and juice of limes.
- Add pork back to instant pot and cook on high for 90 minutes.
- Hit cancel and allow to natural release for 10 minutes, then quick release.
- Shred pork and serve!
