    Easy Shrimp Spaghetti Squash Recipe

    This Shrimp Spaghetti Squash Recipe is so simple and versatile. It is a crowd pleaser recipe and great for weekends away with friends. You can make everything in one pan and I highly recommend using this 10 minute Spaghetti Squash Recipe  to make everything so much faster!

    This is a creamy, lightened up, spaghetti style dinner.

    You can substitute literally EVERYTHING in this recipe - except the brie! That's what brings it all together.

    Healthy Shrimp Recipe

    What do you need:

    • spaghetti squash
    • 1 can diced tomatoes
    • Protein of choice – recommend shrimp! ( I used the Trader Joe's Frozen Seafood Blend here)
    • 8 oz brie
    • Minced garlic
    • Sliced White Mushroom
    • Zucchini
    • Capers
    • Parmesan

    Substitutions:

    No squash? Try linguine
    No shrimp ? try chicken or other protein of choice
    No mushroom/ zucchini? Try spinach
    No tomatoes? Try sun dried tomatoes marinated in olive oil

    Over the Spoon for:

    Any excuse to eat Brie!

    Gluten-free

    Full of protein and fiber

    Seafood pasta in a bowl How to make:

    1. Cook spaghetti squash, shred, and set aside.
    2. Cut off brine from brie and cut into 1 inch pieces and place in a bowl with tomatoes.
    3. In a large pan on medium heat, sauté garlic, shrimp, zucchini, and mushroom until shrimp is fully cooked.
    4. Stir in spaghetti squash, brie, and tomatoes until brie fully melted.
    5. Serve topped with salt, pepper, capers, and parmesan.

    Serve with:

    This shrimp spaghetti squash is great on its own! Or you could pair with Balsamic Green Bean Side Dish, sliced French bread, or a side salad.

    Ingredients
      

    • 1 large spaghetti squash
    • 1 bag frozen peeled shrimp
    • 8 oz. brie cheese
    • 1 can diced tomatoes
    • 1 cup sliced white mushrooms
    • 1 medium zucchini, sliced
    • 1 cup parmesan cheese
    • 1 tbsp minced garlic
    • 3 tbsp capers

    Instructions
     

    • Cook spaghetti squash, shred and set aside. (I recommend microwave method)
    • Cut off brine from brie and cut into 1 inch pieces and place in a bowl with tomatoes.
    • In a large pan on medium heat, sauté garlic, shrimp, zucchini, and mushroom until shrimp is fully cooked.
    • Stir in spaghetti squash, brie, and tomatoes until brie fully melted.
    • Serve topped with salt, pepper, capers, and parmesan.
