This is a creamy, lightened up, spaghetti style dinner.
You can substitute literally EVERYTHING in this recipe - except the brie! That's what brings it all together.
What do you need:
- spaghetti squash
- 1 can diced tomatoes
- Protein of choice – recommend shrimp! ( I used the Trader Joe's Frozen Seafood Blend here)
- 8 oz brie
- Minced garlic
- Sliced White Mushroom
- Zucchini
- Capers
- Parmesan
Substitutions:
No squash? Try linguine
No shrimp ? try chicken or other protein of choice
No mushroom/ zucchini? Try spinach
No tomatoes? Try sun dried tomatoes marinated in olive oil

How to make:
- Cook spaghetti squash, shred, and set aside.
- Cut off brine from brie and cut into 1 inch pieces and place in a bowl with tomatoes.
- In a large pan on medium heat, sauté garlic, shrimp, zucchini, and mushroom until shrimp is fully cooked.
- Stir in spaghetti squash, brie, and tomatoes until brie fully melted.
- Serve topped with salt, pepper, capers, and parmesan.

Ingredients
- 1 large spaghetti squash
- 1 bag frozen peeled shrimp
- 8 oz. brie cheese
- 1 can diced tomatoes
- 1 cup sliced white mushrooms
- 1 medium zucchini, sliced
- 1 cup parmesan cheese
- 1 tbsp minced garlic
- 3 tbsp capers
Instructions
- Cook spaghetti squash, shred and set aside. (I recommend microwave method)
- Cut off brine from brie and cut into 1 inch pieces and place in a bowl with tomatoes.
- In a large pan on medium heat, sauté garlic, shrimp, zucchini, and mushroom until shrimp is fully cooked.
