This is a creamy, lightened up, spaghetti style dinner.
You can substitute literally EVERYTHING in this recipe - except the brie! That's what brings it all together.
What do you need:
spaghetti squash
1 can diced tomatoes
Protein of choice – recommend shrimp! ( I used the Trader Joe's Frozen Seafood Blend here)
8 oz brie
Minced garlic
Sliced White Mushroom
Zucchini
Capers
Parmesan
Substitutions:
No squash? Try linguine
No shrimp ? try chicken or other protein of choice
No mushroom/ zucchini? Try spinach
No tomatoes? Try sun dried tomatoes marinated in olive oil

How to make:
Cook spaghetti squash, shred, and set aside.
Cut off brine from brie and cut into 1 inch pieces and place in a bowl with tomatoes.
In a large pan on medium heat, sauté garlic, shrimp, zucchini, and mushroom until shrimp is fully cooked.
Stir in spaghetti squash, brie, and tomatoes until brie fully melted.
Serve topped with salt, pepper, capers, and parmesan.
