  • Carrots – Naturally sweet and packed with vitamins
  • Baby bella mushrooms – Add a rich, umami flavor
  • Celery – Provides a subtle crunch and enhances the overall flavor.
  • Coconut milk – Use unsweetened, full-fat coconut milk. Makes the soup creamy without dairy, adding a hint of natural sweetness.

Substitutions

  • no chicken breast? try chicken thighs or rotisserie chicken
  • no wild rice? Try brown rice, farro, or quinoa and add additional spices
  • different veggies- try diced sweet potatoes, butternut squash, or bell peppers
  • don't do coconut? Cashew cream, oat milk, or unsweetened almond milk for a different dairy-free creaminess.

Step by step instructions

  • Place all ingredients except for the coconut milk in the crockpot

  • Cook for 3-4 hours on high or 6-8 on low.
  • Remove chicken from the crockpot and shred then return to the crockpot.
  • Add 1 can of coconut milk and stir
  • Serve with fresh parsley, salt and pepper to taste.

Tips and Notes:

Wild Rice Timing – If using a wild rice blend with seasonings, check the package instructions. Some blends cook faster than others. If it cooks too quickly, add it later in the cooking process.

Shredding Chicken Easily – After slow cooking, remove the chicken and shred it with two forks before stirring it back in. You can also use a hand mixer for super quick shredding!

Creamy Texture – Shake the coconut milk can well before opening, as it naturally separates. If you prefer a thicker soup, stir in a cornstarch slurry (1 tablespoon cornstarch + 2 tablespoon water) at the end.
