Why You Will Love This Dinner
Easy weeknight dinner- all you need to do is throw everything in the crockpot and let it do the work!
Healthy Ingredients-Packed with protein from chicken, fiber-rich wild rice, and nourishing veggies, this dairy-free soup is both wholesome and satisfying.
Versatile meal- Enjoy it as a cozy dinner, meal prep for the week, or freeze leftovers for a quick, stress-free meal later!
Ingredients
- Chicken breasts – A lean source of protein that makes the soup hearty and satisfying.
- Wild rice with seasonings – Adds great flavor and fiber
- Carrots – Naturally sweet and packed with vitamins
- Baby bella mushrooms – Add a rich, umami flavor
- Celery – Provides a subtle crunch and enhances the overall flavor.
- Coconut milk – Use unsweetened, full-fat coconut milk. Makes the soup creamy without dairy, adding a hint of natural sweetness.
Substitutions
- no chicken breast? try chicken thighs or rotisserie chicken
- no wild rice? Try brown rice, farro, or quinoa and add additional spices
- different veggies- try diced sweet potatoes, butternut squash, or bell peppers
- don't do coconut? Cashew cream, oat milk, or unsweetened almond milk for a different dairy-free creaminess.
Step by step instructions
- Place all ingredients except for the coconut milk in the crockpot
- Cook for 3-4 hours on high or 6-8 on low.
- Remove chicken from the crockpot and shred then return to the crockpot.
- Add 1 can of coconut milk and stir
- Serve with fresh parsley, salt and pepper to taste.
Tips and Notes:
Wild Rice Timing – If using a wild rice blend with seasonings, check the package instructions. Some blends cook faster than others. If it cooks too quickly, add it later in the cooking process.
Shredding Chicken Easily – After slow cooking, remove the chicken and shred it with two forks before stirring it back in. You can also use a hand mixer for super quick shredding!
Creamy Texture – Shake the coconut milk can well before opening, as it naturally separates. If you prefer a thicker soup, stir in a cornstarch slurry (1 tbsp cornstarch + 2 tbsp water) at the end.
Serving suggestions:
Garnish for Extra Flavor: Top with fresh parsley, green onions, or a squeeze of lemon juice to brighten up the flavors.
Side Pairings: Serve with a slice of crusty sourdough, gluten-free bread, or a side salad for a complete meal.
Storage and Reheating Instructions
Refrigeration: Store in an airtight container for up to 4 days. The soup will thicken as it sits—just add a splash of broth or water when reheating.
Freezing: This soup freezes well! Let it cool completely, then store in a freezer-safe container for up to 3 months. Thaw in the fridge overnight before reheating.
Meal Prep Tip: Chop all veggies in advance and store them in the fridge to quickly make this in the morning!
