I've been making this tortellini soup every winter because it's such an easy soup that makes great leftovers. Tortellini cooks so quickly and is such a versatile addition as you can change out which flavors of tortellini you prefer to use!

Step by step instructions

Step 1: Sauté onions and garlic in a pot with olive oil and a pinch of salt. (always make your onions sweat!!)

Step 2: Add ground beef, cook until browned, then drain excess fat.

Step 3: Stir in tomatoes and seasoning, then add broth and bring to a boil.

Step 4: Add tortellini, cook briefly, then reduce heat.

Step 5: Stir in spinach until wilted.Finish with a splash of cream and parmesan.

Tips and Notes:

Use fresh tortellini – Fresh cooks faster, while frozen can be used it may need an extra minute or two.
Don’t overcook the tortellini – It will continue cooking in the hot broth.
Brown the beef before adding broth– This adds extra depth of flavor to the soup.

Storage and Reheating Instructions

Refrigerate leftovers – Store in an airtight container for up to 3 days.

Tortellini does not freeze and thaw well so I recommend freezing without the tortellini if you'd like to freeze the base of the soup before adding tortellini.

Reheat gently – Warm on low heat to prevent the cream from separating.

Ingredients
  

  • 1 cup diced onions
  • 3 cloves minced garlic
  • 1 lb. ground beef
  • 1 can of diced tomatoes
  • 1 tablespoon Italian seasoning
  • 2 cups broth
  • 1 lb. package of spinach tortellini
  • 2 big handfuls spinach
  • 2 tablespoon half and half
  • ¼ cup grated parmesan cheese plus more for topping!

Instructions
 

  • Saute diced onions and garlic in a large pot with 1 tablespoon olive oil and a pinch of salt.
  • Add ground beef and brown, then drain any extra fat.
  • Add a can of tomatoes and Italian seasoning to beef and stir, then pour in broth and bring to a boil.
  • Pour tortellini into boiling soup and cook for 2 minutes, then turn heat down to low.
  • Add spinach and stir until wilted.
  • Finish soup with a splash of cream and ¼ cup parmesan added to pot.
