Creamy Dairy Free Chicken and Wild Rice Soup

- 2 large chicken breasts
- 1 package wild rice with seasonings
- 1 tablespoon minced garlic
- 1 cup sliced carrots
- 2 cups sliced baby bella mushrooms
- 3 celery stalks sliced
- 1 teaspoon salt
- 3 cups chicken broth
- 1 can coconut milk
Place all ingredients except for the coconut milk in the crockpot
Cook for 3-4 hours on high or 6-8 on low.
Remove chicken from the crockpot and shred then return to the crockpot.
Add 1 can of coconut milk and stir
Serve with fresh parsley, salt and pepper to taste.
