Creamy Dairy Free Chicken and Wild Rice Soup

Equipment

  • 1 Large Crockpot

Ingredients

  • 2 large chicken breasts
  • 1 package wild rice with seasonings
  • 1 tablespoon minced garlic
  • 1 cup sliced carrots
  • 2 cups sliced baby bella mushrooms
  • 3 celery stalks sliced
  • 1 teaspoon salt
  • 3 cups chicken broth
  • 1 can coconut milk

Instructions

  • Place all ingredients except for the coconut milk in the crockpot
  • Cook for 3-4 hours on high or 6-8 on low.
  • Remove chicken from the crockpot and shred then return to the crockpot.
  • Add 1 can of coconut milk and stir
  • Serve with fresh parsley, salt and pepper to taste.
