Easy Spicy Peanut Butter Noodles (using Spaghetti Squash!)

This spicy peanut butter noodles recipe is the perfect weeknight dinner! It is such a great one pan dinner that makes amazing leftovers.

I've been making this on repeat lately as it provides such great flavor and can easily be customized. This can easily be made as a low carb dinner using spaghetti squash noodles, you can add many types of protein and additional veggies!

Make these noodles in about 20 minutes (or less!) if you prep ahead your noodles.

Use pantry staples, perfect for when you need a grocery run.

Add this to your weekly rotation switch things up with a variety of veggies and proteins.

Ingredients

  • natural peanut butter - make sure the ingredients are just peanuts and salt - you can use crunchy peanut butter if you like and salt-free is fine!
  • tamari​ - coconut aminos or soy sauce works as well! Tamari is a great gluten free option and has less sodium than soy sauce.
  • rice vinegar​ - perfect to bring the sauce flavors together
  • Hot Honey ​- perfect for a sweet and spicy flavor profile - if serving to kids you could save the hot honey to drizzle on after
  • 1 clove pressed garlic​ - don't have fresh? frozen crushed garlic cloves are a great option
  • cooked spaghetti squash​ or rice noodles - if you want to make this a low carb dish using spaghetti squash noodles are the best swap or regular noodles
  • cilantro or sliced green onions for garnish​ - or both!! or none - I like to add them for a little green and extra flavor
  • Lime - add a fresh acidity to serve
  • crushed peanuts for garnish - if you don't have crushed peanuts using crunchy peanut butter in the sauce is a great option!

Variations

The ways you can change up these spicy peanut noodles is endless!
Want to add protein? add cooked shredded chicken, cooked ground pork, or shelled edamame beans

Want more vegetables? some great options are cooked broccoli, chopped nappa cabbage, cooked bok choy, edamame, cooked mushrooms.

Step-by-step instructions

Start by cooking your noodles (or spaghetti squash!) and set aside.

In a large mixing bowl stir together all the ingredients for your spicy peanut sauce.

Add your cooked noodles to a large pot and stir in peanut sauce. Heat on low, stirring frequently.

Top with lime juice, crushed peanuts, and cilantro or green onions to garnish!

Tips and Notes:

Spicy Peanut Butter Noodles can be served hot or cold. They are such a great lunch to pack for work!

Serving Suggestions

Reheat by slowly heating up in a greased pan or individually microwave servings.

This dish is amazing as a stand alone dish but is also great served along side a crunch coleslaw salad.

Storage:

Keep in a sealed container in the refrigerator for up to 5 days.

Ingredients
  

  • cup natural peanut butter
  • ¼ cup tamari​
  • ¼ cup rice vinegar​
  • ¼ cup Hot Honey ​
  • 1 clove pressed garlic​
  • 3-4 cups cooked spaghetti squash​ or rice noodles
  • ¼ cup cilantro or sliced green onions for garnish​
  • Lime for garnish​
  • ¼ cup crushed peanuts for garnish

Instructions
 

  • Cook 3-4 cups of rice noodles or spaghetti squash and set aside in a large bowl.
  • Stir Hot Honey, peanut butter, tamari, rice vinegar, and garlic in a mixing bowl until combined.​
  • Heat cooked spaghetti squash noodles in a large pot and stir in the peanut sauce.​
  • Serve with cilantro, lime juice, and crushed peanuts.​
