The Best Sheet Pan Gnocchi with Sausage, Corn and Bursting Tomatoes

This Sheet Pan Gnocchi with Sausage, Corn, and Tomatoes is the perfect weeknight dinner. What I love about this Sheet Pan Dinner is that everything cooks together on one pan, including the gnocchi!

This is one of my favorite dinners for that end-of-summer stretch when tomatoes, corn, peppers, and fresh basil are everywhere. The tomatoes burst and get saucy as they roast, the corn gets sweet and caramelized, and the sausage makes it hearty enough to be a complete meal.

Everything goes straight onto the sheet pan and roasts at 415°F. Finish with plenty of fresh basil and Parmesan and dinner is done.

Gnocchi

I use a 12-ounce bag of cauliflower gnocchi, but traditional potato gnocchi works too. There's no need to boil it first!

Cherry Tomatoes

These are key! As the tomatoes roast, they burst and release their juices, creating an easy sauce that coats the gnocchi.

Red Bell Pepper

Use Regular Gnocchi

Traditional shelf-stable potato gnocchi works beautifully and can go straight onto the sheet pan without boiling.

Change the Sausage

Try chicken sausage, turkey sausage, or spicy Italian sausage.

Use Frozen Corn

No fresh corn? Add frozen corn directly to the sheet pan.

Add More Vegetables

Zucchini, red onion, or chopped eggplant would all be delicious additions.

Make It Spicy

Use spicy Italian sausage and add red pepper flakes before roasting.

Make It Extra Cheesy

Add torn burrata or fresh mozzarella after the sheet pan comes out of the oven.

Tips and Notes

  • Don't boil the gnocchi first. It goes straight from the package onto your sheet pan.
  • Give everything enough room to roast. An overcrowded pan will steam the ingredients instead of caramelizing them.
  • Toss halfway through cooking so the gnocchi browns more evenly.
  • Let those tomatoes burst! Their juices essentially become the sauce for the dish.
  • If using frozen cauliflower gnocchi, add it straight from frozen unless the package specifically directs otherwise.
  • Fresh basil should be added after roasting so it stays fresh and flavorful.

Use a meat thermometer to check the center of a meatball. Pork sausage should reach 160°F; chicken or turkey sausage should reach 165°F.

Can I make this ahead?

Yes, although the gnocchi has the best texture immediately after roasting. Leftovers are still delicious reheated in the air fryer or oven.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheating

For the best texture, reheat in the air fryer or oven at 375–400°F until warmed through and slightly crispy.

You can also microwave individual portions, although the gnocchi will be softer.

Tips

Add fresh basil and another sprinkle of Parmesan after reheating to make leftovers taste fresh again.
