Easy Mexican Shrimp Bowls
These Mexican Shrimp Bowls are the perfect quick weeknight dinner. What I love about this less than 30 Minute Dinner is that you can start with flavorful shrimp and rice, then use whatever toppings you already have in the fridge!
The star of these bowls is the Mexican-inspired marinated shrimp. A quick lime, garlic, chili powder, and cumin marinade gives the shrimp tons of flavor without requiring much prep. Add a tropical salsa, black beans, avocado, or whatever toppings your family loves and dinner is done.
These also make great leftovers and are easy to switch up. And if you don't have cooked rice ready? Skip the bowl altogether and stuff everything into tortillas for an easy shrimp taco night.

I love a mango pico de Gallo (I get mine from Trader Joe's!) here because the sweet fruit is so good with the smoky shrimp. You can also simply add pineapple or mango chunks.

Black beans, pickled onions, shredded cheese, avocado, sour cream, cilantro, or jalapeños are all delicious.

Instructions
1. Make the Shrimp Marinade
In the bottom of a large bowl, whisk together olive oil, lime juice, minced garlic, chili powder, cumin, oregano, salt, and pepper.
2. Marinate the Shrimp
Add the peeled and deveined shrimp and toss until evenly coated.
Marinate for 10–15 minutes.
Avoid marinating for longer than 30 minutes. The acid in the lime juice can begin changing the texture of the shrimp.
3. Cook the Shrimp
Heat a skillet over high heat.
Add the shrimp in a single layer and cook for approximately 1–2 minutes per side.
Remove them from the heat as soon as they're pink, opaque, and curled.

4. Build the Bowls
Add cooked rice to each bowl and top with the cooked shrimp.
Add mango pico de gallo or pineapple along with your favorite toppings.
5. Serve
Finish with a squeeze of fresh lime and serve immediately.

- Don't marinate the shrimp for more than 30 minutes.
- Shrimp cook FAST. Remove them from the heat as soon as they're pink and opaque so they don't become rubbery.
