diced onions

can of diced tomatoes

Italian seasoning

broth

package of spinach tortellini

big handfuls spinach

tablespoon
half and half
¼
cup
grated parmesan cheese plus more for topping!
Instructions
Saute diced onions and garlic in a large pot with 1 tablespoon olive oil and a pinch of salt.
Add ground beef and brown, then drain any extra fat.
Add a can of tomatoes and Italian seasoning to beef and stir, then pour in broth and bring to a boil.
Pour tortellini into boiling soup and cook for 2 minutes, then turn heat down to low.
Add spinach and stir until wilted.
Finish soup with a splash of cream and ¼ cup parmesan added to pot.
