Easy Sheet Pan Ratatouille (aka Lazy Baked Ratatouille)
This Easy Sheet Pan Ratatouille is the perfect way to turn all of those late-summer vegetables into an easy dinner or side dish. What I love about this Sheet Pan Dinner is that you can roast everything together and then decide how you want to serve it.
Zucchini, eggplant, bell peppers, tomatoes, and onion get caramelized in the oven with plenty of garlic and Italian seasoning. Then comes the best part: tear creamy mozzarella over the warm vegetables and finish everything with fresh basil, balsamic glaze and Parmesan.
I've been making this when summer produce is at its best, and it's such an easy recipe to switch up. Serve it as a vegetable side dish or make it a meal by adding chicken sausage, pasta, or gnocchi.

How to make this sheet pan Ratatouille
1. Prepare the Vegetables
Add chopped zucchini, eggplant, bell pepper, cherry tomatoes, sliced onion, and minced garlic to a large sheet pan.

Drizzle everything with olive oil.
Sprinkle with kosher salt, Italian seasoning, dried basil, black pepper, and red pepper flakes if using.

3. Roast
Roast for 25–30 minutes, tossing halfway through.
