    One-Pan Ground Beef Creamy Tomato Orzo (with zucchini & mushrooms)

    This one pan ground beef creamy tomato orzo recipe is one of my favorite weeknight dinners. What I love about this one pan dinner is how it is such a comfort meal that is also full of vegetables! Have extra beef? Try this Hearty Tuscan Tortellini Soup next!

    This is such a great rainy day meal and makes great leftovers. Easy to switch up with ground turkey or ground chicken to make it leaner or you can completely omit the meat to make it vegetarian!

    This creamy tomato orzo is the best one-pan dinner - hello easy clean up!

    It is loaded with protein and vegetables

    It makes the best leftovers for an easy workweek lunch

    Ingredients

    • Garlic - fresh is best but pre-minced garlic will work as well!
    • Onion - fresh or already diced and frozen onion is totally fine
    • Ground Beef - makes this a filling comfort meal
    • Mushrooms & Zucchini - great quick cooking veggies to add to the nutrients
    • Orzo - a cozy and small pasta
    • Vodka Sauce - delicious creamy sauce to tie it all together

    Substitutions and Variations

    No beef? Try ground chicken or ground turkey - or no meat at all

    Mushroom and zucchini - you can leave out the veggies or try using spinach or eggplant to change the veggies

    No orzo? Try another small pasta or cook pasta ahead and stir in already cooked pasta

    Don't like vodka sauce - use any marinara

    Step-by-step instructions to make Ground Beef Creamy Tomato Orzo

    Step 1:

    Prep the garlic, onion, zucchini and mushrooms.

    2. Saute all the vegetables and then stir in and brown the beef.

    3. Stir in the orzo, broth, and vodka sauce and bring to a boil.

    Garnish with parmesan and enjoy!

    Tips and Notes:

    If you have a fattier beef, drain the fat from the pan before adding the orzo

    Storage:

    Store in the refrigerator for 4-5 days or freeze and eat within 3 months.

    Reheating:

    Microwave in a microwave-safe bowl and top with parmesan after heating.

    Equipment

    • 1 Pot or Large Sauté Pan

    Ingredients
      

    • 1 tablespoon olive oil
    • 3 cloves garlic minced
    • 1 small onion diced
    • 1 lb. ground beef
    • 1 cup mushrooms sliced
    • 1 medium zucchini diced
    • 1 cup orzo
    • 2 cups broth chicken or beef
    • 1 cup vodka sauce

    Instructions
     

    • Heat olive oil in a large pot or deep skillet over medium heat.
      Add garlic and onion, sautéing until fragrant and softened, about 2-3 minutes. Add ground beef, cooking until browned and crumbled, about 5-7 minutes. Season with salt and pepper.
    • Stir in mushrooms and zucchini, cooking until softened, about 3-4 minutes.
    • Mix in the orzo, then pour in the broth and vodka sauce. Stir to combine.
    • Bring the mixture to a gentle boil, then reduce heat to low.
      Cover and simmer, stirring occasionally, for about 10-12 minutes, or until the orzo is tender and the liquid is mostly absorbed.
    • Garnish with grated Parmesan cheese and fresh parsley. Serve hot and enjoy!
