    This oven-baked beef crispy taco recipe is one of my most repeated weeknight dinners. What I love about this 30-minute dinner is how easily you can sneak in leftovers from the fridge.

    I've been making this for sheetpan dinner weekly for the past few years! It's the best use of any protein leftovers you have in the fridge. Easy to switch up with ground turkey, ground beef, or shredded chicken.

    Ground beef– A protein that keeps the tacos satisfying without being too heavy.

    Taco seasoning – Adds bold, classic Mexican-inspired flavors with minimal effort.

    Low-carb tortillas – A lighter option that crisps up beautifully in the oven.

    Refried black beans – Creamy, fiber-rich, and packed with plant-based protein for extra heartiness.

    Shredded Mexican cheese blend – A melty, flavorful mix that binds everything together.

    Substitutions and Variations

    No Ground Beef? Try:

    • Shredded rotisserie chicken – A great shortcut for even quicker prep.
    • Black beans & corn – Make it vegetarian while keeping it hearty.
    • Ground turkey or chorizo – For a richer, bolder flavor.

    Tortilla Options: use any type of your favorite tortillas or use tortilla chips and make baked nachos instead

    Cheese Variations:

    • Pepper Jack – For a spicy kick.
    • Cotija or Queso Fresco – Adds a salty, crumbly texture.
    • Dairy-free cheese – Keeps it vegan-friendly.

    Extra Fillings:

    • Sautéed bell peppers & onions –for extra fiber
    • Jalapeños or green chilies – For a little heat.
    • Mashed avocado – Creamy and delicious inside or on top.

    Topping Ideas:

    • Pico de gallo – Bright and fresh flavor.
    • Greek yogurt instead of sour cream – A healthier, protein-packed swap.
    • Chipotle mayo drizzle – Smoky, creamy, and delicious.

    Step by step instructions

    Preheat oven to 400°F. Cook the ground beef in a skillet with olive oil until browned, then add taco seasoning and water. Simmer for a few minutes.

    Prepare the tortillas by spreading refried black beans, a scoop of seasoned beef, and shredded cheese on each one.

    Fold the tortillas in half and place them on a greased or parchment-lined sheet pan.

    Lightly spray the tops with cooking spray for crispiness.

    Bake for 10-12 minutes until the tortillas are crispy and the cheese is melted.

    Serve with toppings like lettuce, tomatoes, sour cream, or your favorites!

    Tips and Notes:

    Don’t overfill the tortillas – Too much filling can make them hard to fold and stay closed.

    Use parchment paper or lightly grease the pan – This prevents sticking and makes cleanup easier.

    Press down gently on the tacos before baking to help them hold their shape.

    Broil for the last 1-2 minutes for extra crunch, but watch closely to avoid burning!

    Storage and Reheating Instructions

    Meal prep friendly! Cook the taco filling in advance and store it in the fridge for up to 3 days. Assemble and bake when ready!

    Reheat leftovers in the oven or air fryer at 350°F for a few minutes to keep them crispy. The microwave works, but they’ll be softer.

    • 1 lb ground beef
    • 1 packet taco seasoning
    • 8 small low-carb tortillas
    • 1 cup refried black beans
    • 1 ½ cups shredded Mexican cheese blend
    • 1 tablespoon olive oil

    Instructions
     

    • Preheat the oven to 400°F.
    • Heat olive oil in a large skillet over medium high heat and cook ground beef for 5-7 minutes until browned and cooked through.
    • Sprinkle in the taco seasoning and ¼ cup of water. Stir to combine, letting it simmer for 2-3 minutes.
    • Lightly grease or line a large baking dish with parchment paper.
    • Spread a thin layer of refried black beans, a scoop of ground beef, and a handful of cheese on each tortilla..
    • Fold each tortilla in half and place on sheet pan.
    • Lightly spray the tops of the tacos with cooking spray (this helps them get crispy).
    • Bake for 10-12 minutes, or until the tortillas are crispy and the cheese is melted.
    • Serve with your favorite taco toppings like tomatoes, lettuce, and sour cream
