This oven-baked beef crispy taco recipe is one of my most repeated weeknight dinners. What I love about this 30-minute dinner is how easily you can sneak in leftovers from the fridge.
I've been making this for sheetpan dinner weekly for the past few years! It's the best use of any protein leftovers you have in the fridge. Easy to switch up with ground turkey, ground beef, or shredded chicken.

Step by step instructions
Preheat oven to 400°F. Cook the ground beef in a skillet with olive oil until browned, then add taco seasoning and water. Simmer for a few minutes.
Prepare the tortillas by spreading refried black beans, a scoop of seasoned beef, and shredded cheese on each one.
Fold the tortillas in half and place them on a greased or parchment-lined sheet pan.
Lightly spray the tops with cooking spray for crispiness.

- 1 lb ground beef
- 1 packet taco seasoning
- 8 small low-carb tortillas
- 1 cup refried black beans
- 1 ½ cups shredded Mexican cheese blend
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F.
- Heat olive oil in a large skillet over medium high heat and cook ground beef for 5-7 minutes until browned and cooked through.
- Sprinkle in the taco seasoning and ¼ cup of water. Stir to combine, letting it simmer for 2-3 minutes.
- Lightly grease or line a large baking dish with parchment paper.
- Spread a thin layer of refried black beans, a scoop of ground beef, and a handful of cheese on each tortilla..
- Fold each tortilla in half and place on sheet pan.
- Lightly spray the tops of the tacos with cooking spray (this helps them get crispy).
