For the Mexican Shrimp

pound
raw shrimp
peeled and deveined

tablespoons
olive oil
2
tablespoons
fresh lime juice
3
cloves
garlic
minced

teaspoon
chili powder
1
teaspoon
cumin
½
teaspoon
oregano
½
teaspoon
kosher salt
¼
teaspoon
black pepper
For the Bowls
Cooked rice
Mango pico de gallo or pineapple chunks
Black beans
Pickled red onions
Shredded cheese
Avocado
Sour cream
Jalapeños
Fresh cilantro
Lime wedges
Instructions
Whisk together olive oil, lime juice, garlic, chili powder, cumin, oregano, salt, and pepper in a large bowl.
Add shrimp and toss until evenly coated.
Marinate for 10–15 minutes, but no longer than 30 minutes.
While the shrimp marinates, prep your a bowl with ½ cup cooked rice and your favorite toppings.
Heat a skillet over high heat.
Cook shrimp for 1–2 minutes per side, until pink and opaque.
Top bowls with cooked shrimp.
Finish with fresh lime juice and serve.
Notes
No rice ready? Turn the same ingredients into easy shrimp tacos by serving everything inside warm tortillas.
