Ingredients

For the Mexican Shrimp

  • 1 pound raw shrimp peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons fresh lime juice
  • 3 cloves garlic minced
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ½ teaspoon oregano
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

For the Bowls

  • Cooked rice
  • Mango pico de gallo or pineapple chunks
  • Black beans
  • Pickled red onions
  • Shredded cheese
  • Avocado
  • Sour cream
  • Jalapeños
  • Fresh cilantro
  • Lime wedges

Instructions

  • Whisk together olive oil, lime juice, garlic, chili powder, cumin, oregano, salt, and pepper in a large bowl.
  • Add shrimp and toss until evenly coated.
  • Marinate for 10–15 minutes, but no longer than 30 minutes.
  • While the shrimp marinates, prep your a bowl with ½ cup cooked rice and your favorite toppings.
  • Heat a skillet over high heat.
  • Cook shrimp for 1–2 minutes per side, until pink and opaque.
  • Top bowls with cooked shrimp.
  • Finish with fresh lime juice and serve.

Notes

No rice ready? Turn the same ingredients into easy shrimp tacos by serving everything inside warm tortillas.
