- 1 ½ cups rice rinsed
- 1 13.5 fl oz can coconut milk
- 1 ½ cups water
- 1 big pinch salt
- ¼ cup chopped fresh cilantro
Rinse the rice under cold water until the water runs clear.
In a medium pot, combine the rice, coconut milk, water, and salt.
Bring to a boil over medium-high heat, then reduce the heat to low and cover.
Simmer for 12 minutes, or until the rice is tender and liquid is absorbed.
Remove the lid and stir in the chopped cilantro before serving
