2½ cups finely chopped parsley ¾ cup chopped mint 2 cups diced English cucumber 1 red bell pepper diced 2 cups cooked lentils 2 lemons juiced 1 tablespoon olive oil 1 tablespoon red wine vinegar Salt and pepper to taste
Finely chop parsley and mint.
Dice cucumber and bell pepper.
In a large bowl, combine lentils, cucumber, and bell pepper. Season with salt and pepper.
Add chopped herbs.
Stir in lemon juice, olive oil, and red wine vinegar.
Toss until combined.
