- 2 cans black beans (rinsed and drained)
- 1 cup salsa (I like a mild salsa)
- 1 ½ teaspoon cumin
- 1 cup beef broth
- salt & pepper to taste
Optional toppings
- avocado
- cilantro
- greek yogurt or sour cream
- shredded cheese
- lime wedge
In a large blender (or in a large bowl if using immersion blender) blend together all ingredients.
Serve right away if you want it as a cold soup, or heat up a bowl in the microwave or on the stovetop if you'd like it as a warm soup.
Serve with toppings such as sour cream, cilantro, avocado and tomatoes.
