Ingredients

  • 2 cans black beans (rinsed and drained)
  • 1 cup salsa (I like a mild salsa)
  • 1 ½ teaspoon cumin
  • 1 cup beef broth
  • salt & pepper to taste

Optional toppings

  • avocado
  • cilantro
  • greek yogurt or sour cream
  • shredded cheese
  • lime wedge

Instructions

  • In a large blender (or in a large bowl if using immersion blender) blend together all ingredients.
  • Serve right away if you want it as a cold soup, or heat up a bowl in the microwave or on the stovetop if you'd like it as a warm soup.
  • Serve with toppings such as sour cream, cilantro, avocado and tomatoes.
