Ingredients

  • 2 large chicken breasts
  • 2 cups chopped celery
  • 1 cup chopped carrots
  • ½ cup diced yellow onion
  • 1 bag riced cauliflower
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ cup mild buffalo sauce
  • cup plain Greek yogurt
  • cup whipped cream cheese
  • 1 cup shredded cheddar cheese

Toppings

  • Ranch
  • Bleu Cheese
  • Green Onion

Instructions

  • Bring a pot of water to boiling and cook chicken breasts for 12 minutes or until chicken is fully cooked.
  • Shred chicken and set aside.
  • In a large pan, sauté diced onion, celery, and carrots for 5 minutes.
  • Stir in cauliflower rice and cook for 3 minutes.
  • Stir in garlic powder, salt, yogurt, buffalo sauce, and cream cheese.
  • Add the shredded chicken and transfer to a baking dish.
  • Top with shredded cheese and broil for 5 minutes.
  • Serve with toppings of choice.
