- 2 large chicken breasts
- 2 cups chopped celery
- 1 cup chopped carrots
- ½ cup diced yellow onion
- 1 bag riced cauliflower
- 1 teaspoon garlic powder
- 1 teaspoon salt
- ½ cup mild buffalo sauce
- ⅓ cup plain Greek yogurt
- ⅓ cup whipped cream cheese
- 1 cup shredded cheddar cheese
Toppings

- Bleu Cheese
- Green Onion
Bring a pot of water to boiling and cook chicken breasts for 12 minutes or until chicken is fully cooked.
Shred chicken and set aside.
In a large pan, sauté diced onion, celery, and carrots for 5 minutes.
Stir in cauliflower rice and cook for 3 minutes.
Stir in garlic powder, salt, yogurt, buffalo sauce, and cream cheese.
Add the shredded chicken and transfer to a baking dish.
Top with shredded cheese and broil for 5 minutes.
Serve with toppings of choice.
