large egg (whisked)

dried oregano

garlic powder

crumbled feta cheese

chopped marinated sun-dried tomatoes

fresh lemon juice + 1 teaspoon zest

panko bread crumbs
Cooking spray or oil
for greasing the muffin tin

tzatziki for serving
Instructions
Preheat oven to 375°F.
Grease a muffin tin with cooking spray or lightly brush with oil.
In a large bowl, whisk the eggs with spices. Then stir in ground turkey, and mayonnaise.
Add finely chopped sun-dried tomatoes, lemon juice & zest, bread crumbs and feta and gently mix until evenly combined.
Divide mixture evenly among muffin cups (filling ¾ full) and gently press down.
Bake for 25 minutes, or until the internal temperature reaches 165°F.
Let cool a few minutes before serving.
Top with tzatziki and dill to serve.
