Ingredients

Wet Ingredients

  • ¾ cup unsweetened applesauce
  • 1 cup unsweetened soy milk
  • cup pure maple syrup
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 2 tablespoons melted & cooled coconut oil

Dry Ingredients

  • 2 cups rolled oats
  • ¼ cup vanilla protein powder
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • ½ teaspoon allspice
  • ¼ teaspoon salt

Mix-Ins

  • 1 ½ cups finely diced Honeycrisp apple from 1 medium apple

For Topping

  • Thinly sliced apples

Cinnamon Vanilla Glaze (optional)

  • 2 tablespoons Greek yogurt
  • 2 tablespoons maple syrup
  • 2 teaspoons soy milk
  • ½ teaspoon cinnamon

Instructions

  • Preheat the oven to 350°F. Spray an 8×8-inch baking pan with nonstick spray.
  • In a medium bowl, whisk together applesauce, soy milk, maple syrup, vanilla extract, eggs, and melted coconut oil until smooth.
  • Stir in rolled oats, protein powder, baking powder, cinnamon, allspice, and salt. Mix until fully combined.
  • Gently stir in the finely diced Honeycrisp apple.
  • Pour mixture into the prepared baking dish and smooth the top evenly. Arrange thin apple slices on top.
  • Bake for 35–40 minutes, until the edges are lightly golden and the center is set.
  • In a small bowl, whisk together Greek yogurt, maple syrup, soy milk, and cinnamon until smooth.
  • Let bars cool slightly, top with glaze if using, slice into squares, and serve.
