Ingredients

  • 1 diced yellow onion
  • 2 tablespoon minced garlic
  • 3 large chicken breast
  • 4 cups chicken broth
  • 2 cans chopped green chile peppers
  • 4 cans great Northern beans
  • 2 teaspoon cumin
  • 2 teaspoon oregano

Instructions

  • Sauté onion and garlic in olive oil until fragrant (5–6 min).
  • Add to crockpot with chicken, 1 cup broth, beans, chiles, and spices.
  • Cook on LOW for 6–7 hrs or HIGH for 3–4 hrs.
  • Remove chicken, shred with two forks, and return to crockpot.
  • Add remaining broth, stir, and heat for 15–20 minutes.
  • Serve hot with your favorite toppings!
