The Best Italian Meatloaf Mini Muffins

These Italian meatloaf mini muffins are such a wonderful protein to meal prep for busy weeknights. They are freezer friendly and kid approved!

Ingredients

  • 1 lb. lean ground beef
  • 1 tablespoon worcester sauce
  • 1 egg
  • ½ cup diced onion
  • 2 cloves minced garlic
  • 2 teaspoons Italian seasoning
  • ¼ cup shredded parmesan
  • ¼ cup marinara sauce

Topping

  • ¾ cup marinara sauce
  • 1 cup shredded mozzarella cheese

Instructions

  • Preheat oven to 400 degrees Fahrenheit.
  • In a large mixing bowl, mix together all ingredients.
  • Spray a muffin tin with oil and fill each cup with mixture.
  • Bake for 25 minutes and remove from oven.
  • Top each meatloaf cup with a dollop of marinara sauce and cover with mozzarella. Bake for 5 more minutes.
