Ingredients

For the Chicken

  • ½ cup soy sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 teaspoons Minced Garlic
  • 1 teaspoon Minced Ginger
  • 1 pound chicken breast cubed
  • 1 teaspoon cornstarch

For Serving

  • Cooked rice
  • Cucumber sliced
  • Edamame
  • Avocado
  • Pickled onions
  • Sesame seeds
  • Sriracha mayo

Instructions

  • Whisk together soy sauce, brown sugar, rice vinegar, sesame oil, garlic, and ginger.
  • Reserve ⅓ of the sauce.
  • Marinate chicken in remaining sauce for 15–30 minutes.
  • Cook chicken in a skillet until nearly cooked through.
  • Whisk cornstarch into reserved sauce and add to skillet.
  • Simmer 1–2 minutes until thickened.
  • Serve over rice with desired toppings.
