Ingredients

  • cups old-fashioned rolled oats
  • ¾ cup protein powder
  • ¼ cup light brown sugar
  • ¼ teaspoon salt
  • 1 cup unsweetened soy milk
  • 1 cup 1% low-fat cottage cheese
  • cups sliced fresh strawberries divided
  • 2 large eggs lightly beaten
  • 2 teaspoons vanilla extract

Instructions

  • Preheat oven to 350°F and grease an 8-inch baking dish.
  • In a bowl, mix oats, protein powder, brown sugar, and salt.
  • Blend soy milk and cottage cheese until smooth.
  • Stir blended mixture into dry ingredients. Add eggs and vanilla and mix well, then stir in strawberries.
  • Pour into greased baking dish.
  • Bake for 40 minutes or until set.
  • Cool for 15 minutes, slice, and serve.
