- 2½ cups old-fashioned rolled oats
- ¾ cup protein powder
- ¼ cup light brown sugar
- ¼ teaspoon salt
- 1 cup unsweetened soy milk
- 1 cup 1% low-fat cottage cheese
- 2½ cups sliced fresh strawberries divided
- 2 large eggs lightly beaten
- 2 teaspoons vanilla extract
Preheat oven to 350°F and grease an 8-inch baking dish.
In a bowl, mix oats, protein powder, brown sugar, and salt.
Blend soy milk and cottage cheese until smooth.
Stir blended mixture into dry ingredients. Add eggs and vanilla and mix well, then stir in strawberries.
Pour into greased baking dish.
Bake for 40 minutes or until set.
Cool for 15 minutes, slice, and serve.
