Easy Greek Couscous Salad with chickpeas, feta, cucumber and peppers tossed in a homemade red wine vinaigrette. Perfect for meal prep or a fresh summer side!
Cook the pearl couscous according to the package directions. Drain if needed and set aside to cool.
While the couscous cooks, chop the cucumber, bell pepper, red onion, and parsley. Drain and rinse the chickpeas.
Make the vinaigrette by whisking together the olive oil, red wine vinegar, Dijon mustard, honey, Greek seasoning, garlic powder, salt, and black pepper.
Add the cooled couscous, cucumber, bell pepper, red onion, chickpeas, feta, and parsley to a large bowl.
Pour the red wine vinaigrette over the salad and toss until everything is evenly coated.
Serve immediately or refrigerate until ready to enjoy. Give the salad another toss before serving.
