Ingredients

Greek Couscous Salad

  • 1 cup dry pearl couscous
  • 1 cup cucumber chopped
  • 1 red bell pepper diced
  • cup red onion diced
  • 1 15-ounce can chickpeas, drained and rinsed
  • ½ cup crumbled feta cheese
  • cup fresh parsley chopped

Red Wine Vinaigrette

  • cup olive oil
  • ¼ cup red wine vinegar
  • 2 teaspoons Dijon mustard
  • 1 teaspoon honey
  • 1 teaspoon Greek seasoning or Italian seasoning
  • ½ teaspoon garlic powder
  • ½ teaspoon kosher salt
  • ¼ teaspoon black pepper

Instructions

  • Cook the pearl couscous according to the package directions. Drain if needed and set aside to cool.
  • While the couscous cooks, chop the cucumber, bell pepper, red onion, and parsley. Drain and rinse the chickpeas.
  • Make the vinaigrette by whisking together the olive oil, red wine vinegar, Dijon mustard, honey, Greek seasoning, garlic powder, salt, and black pepper.
  • Add the cooled couscous, cucumber, bell pepper, red onion, chickpeas, feta, and parsley to a large bowl.
  • Pour the red wine vinaigrette over the salad and toss until everything is evenly coated.
  • Serve immediately or refrigerate until ready to enjoy. Give the salad another toss before serving.
