Ingredients

  • 10 cups kale
  • 1 lb skirt steak
  • 1 cup pearled couscous
  • ¼ cup feta cheese

Garlic Dressing:

  • ¼ cup olive oil
  • 2 tablespoons lemon juice
  • 2 tablespoons white wine vinegar
  • 1 teaspoon Dijon mustard
  • 3 cloves garlic minced
  • 1 tablespoon fresh tarragon chopped
  • teaspoon salt

Instructions

  • Cook couscous according to package directions and let cool.
  • Whisk together all dressing ingredients.
  • Massage kale with a pinch of salt until softened.
  • Grill steak 6–12 minutes, flipping once, until desired doneness. Rest 10 minutes, then slice.
  • Toss kale with couscous and dressing.
  • Top with steak and feta and serve.
