Ingredients

  • 2 large eggs
  • 2 pounds ground turkey
  • cup breadcrumbs
  • 2 tablespoons mayonnaise
  • 1 teaspoon minced garlic
  • 2 tablespoons taco seasoning
  • 1 small can diced green chiles drained
  • cup finely minced onion
  • Zest of 1 lime
  • 1 tablespoon fresh lime juice

OR instead of taco seasoning:

  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • 1 teaspoon kosher salt
  • ½ teaspoon dried oregano

Instructions

  • Preheat oven to 375°F and grease a muffin tin.
  • Lightly whisk eggs in a large bowl.
  • Add turkey, breadcrumbs, mayonnaise, garlic, taco seasoning, green chiles, onion, lime zest, and lime juice.
  • Gently mix until just combined.
  • Divide evenly among muffin cups and gently press down.
  • Bake for approximately 25 minutes, until the internal temperature reaches 165°F.
  • Cool for a few minutes before removing from the muffin tin.
  • Serve immediately or cool completely for meal prep or freezing.
