2 large eggs 2 pounds ground turkey ⅓ cup breadcrumbs 2 tablespoons mayonnaise 1 teaspoon minced garlic 2 tablespoons taco seasoning 1 small can diced green chiles drained ⅓ cup finely minced onion Zest of 1 lime 1 tablespoon fresh lime juice OR instead of taco seasoning: 1 teaspoon chili powder 1 teaspoon cumin 1 teaspoon kosher salt ½ teaspoon dried oregano
Preheat oven to 375°F and grease a muffin tin.
Lightly whisk eggs in a large bowl.
Add turkey, breadcrumbs, mayonnaise, garlic, taco seasoning, green chiles, onion, lime zest, and lime juice.
Gently mix until just combined.
Divide evenly among muffin cups and gently press down.
Bake for approximately 25 minutes, until the internal temperature reaches 165°F.
Cool for a few minutes before removing from the muffin tin.
Serve immediately or cool completely for meal prep or freezing.
