- 1 egg whisked
- 2 lbs lean ground beef or ground turkey
- ¾ cup diced onion
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1½ teaspoons Dijon mustard
- 1½ teaspoons dried oregano
- 3 teaspoons dried parsley or 3 tablespoons fresh
- ¼ cup BBQ sauce plus ½ cup for topping
- ⅓ cup breadcrumbs
Preheat oven to 400°F and grease a muffin tin.
In a large bowl, whisk the egg.
Add ground meat, onion, salt, garlic powder, Dijon, oregano, parsley, BBQ sauce, and breadcrumbs. Mix until just combined.
Scoop into muffin tin, filling each about ¾ full.
Top each with a dollop of BBQ sauce.
Bake for 25 minutes or until fully cooked.
Let cool slightly before removing and serving.
