Ingredients

  • 1 cup old-fashioned rolled oats
  • cup chia seeds
  • cup vanilla protein powder
  • ¼ teaspoon salt
  • 1 ½ cup unsweetened soy milk (or any milk)
  • ¾ cup whole milk Greek yogurt
  • ½ tablespoon honey
  • 1 teaspoon vanilla extract
  • 1 cup frozen blueberries
  • Zest of 1 lemon
  • Juice of 1 lemon

Instructions

  • In a bowl, whisk together oats, protein powder, chia seeds, and salt.
  • Stir in soy milk, Greek yogurt, honey, and vanilla.
  • Fold in blueberries, lemon zest, and lemon juice.
  • Cover and refrigerate at least 4 hours or overnight.
  • Stir before serving and adjust consistency with milk if needed.
