- 1 cup old-fashioned rolled oats
- ⅓ cup chia seeds
- ⅓ cup vanilla protein powder
- ¼ teaspoon salt
- 1 ½ cup unsweetened soy milk (or any milk)
- ¾ cup whole milk Greek yogurt
- ½ tablespoon honey
- 1 teaspoon vanilla extract
- 1 cup frozen blueberries
- Zest of 1 lemon
- Juice of 1 lemon
In a bowl, whisk together oats, protein powder, chia seeds, and salt.
Stir in soy milk, Greek yogurt, honey, and vanilla.
Fold in blueberries, lemon zest, and lemon juice.
Cover and refrigerate at least 4 hours or overnight.
Stir before serving and adjust consistency with milk if needed.
