- 1 cup rice
- 1 diced red bell pepper
- 1 diced red onion
- 1 can fire roasted tomatoes
- 1 can pinto beans
- 1 cup frozen corn
- 1 pound chicken tenderloins
- 2 cups salsa verde
- ½ cup chicken broth (or water)
- 1 cup shredded mexican cheese
- 1 packet fajita seasoning or taco seasoning
Pre-heat oven to 375 Fahrenheit.
Dice pepper and onion and sauté for 5 minutes in a minute over medium heat.
In a casserole baking dish add rice, chicken, sautéed vegetables, corn, tomatoes, and beans.
Cover with broth, salsa, fajita seasoning and thoroughly stir ingredients in dish.
Cover casserole dish with aluminum foil and bake for 50 minutes.
Take off foil, cover in cheese, and bake uncovered for 5 more minutes.
