Ingredients

  • 1.5 lbs chicken thighs
  • 1 tbsp minced garlic
  • 1 tbsp grated ginger
  • 1 cup Teriyaki sauce
  • ¼ cup quinoa
  • 1 red bell pepper
  • 1 can pineapple chunks, drained
  • 1 tbsp arrowroot powder
  • ½ cup green onion
  • 2 tbsp rice wine vinegar
  • 1 tbsp tamari or soy sauce
  • 1 tbsp sesame seed oil

Instructions

  • Cut chicken thighs into 1 inch pieces.
  • Place chicken thighs in crockpot and top with diced bell pepper, quinoa, ginger, garlic, and teriyaki sauce.
  • Cook on high for 2.5 - 3 hours.
  • With a ladle, remove about 1 cup of liquid and whisk it in a bowl with arrowroot powder, rice wine vinegar, and tamari.
  • Return sauce to crockpot and stir in pineapple chunks and green onion.
  • Serve with a drizzle of sesame seed oil and red pepper flakes for a touch of spice.

Notes

If you omit the quinoa this will cause a lot of excess liquid- it is vital to absorb and create correct consistency.
