Preheat air fryer to 350.
Cook ½ cup rice as instructed. (I always use the rice cooker!)
Cut tops of bell peppers off and set aside.
In a large pan on medium heat, brown turkey, and stir in beans, rotel, and rice.
Add chili powder, cumin, and cooked white wine vinegar and stir thoroughly.
Add turkey mixture to bell peppers and air fry for 12 minutes.
Top each bell pepper with shredded cheese and cook an additional 2 minutes.
