- 1 yellow onion, diced
- 1 green bell pepper, diced
- 1 tbsp minced garlic
- 2 lbs. ground lean turkey
- 1 15 oz can kidney beans
- 1 15 oz can diced tomatoes
- 2½ tbsp tomato paste
- 2 cups chicken broth
- 2 tbsp chili powder
- 1 tbsp cumin
- 2 cups vegetables of your choice or 1 can corn
- 1½ tbsp apple cider vinegar
In a large pan, saute onion, bell pepper, and garlic on medium heat for about 5 minutes.
Add ground turkey and cook completely through.
Add cumin and chili powder, stir thoroughly.
Stir in tomatoes, tomato paste, kidney beans, and broth, then bring to a boil.
Reduce to simmer, add vegetables and simmer for 20 - 25 minutes.
Stir in vinegar, add salt and pepper to taste.
Serve in bowls, topped with favorite toppings!
