- ½ cup cooked shredded chicken
- ½ cup cooked quinoa
- 2 tbsp tzatziki
- 2 tbsp kalamata olives
- 2 tbsp pickled onions
- 1 handful greens of choice
- ¼ cup feta
- 1 drizzle red wine vinegar optional
- salt and pepper to taste
In a large bowl add quinoa and chicken - drizzle with red wine vinegar if you like that extra acidity!
Add all toppings except tzatziki and add salt and pepper to taste.
Dollop tzatziki on top and serve!
