Ingredients

  • 1 ripe banana
  • 1 tbsp cashew flour almond flour or keto pancake mix works too
  • 1 large egg
  • 1 serving vanilla protein powder
  • ½ tsp cinnamon optional
  • ¼ tsp baking powder
  • ¼ tsp salt
  • ¼ cup diced strawberries

Optional

  • 2 tablespoons Psyllium husk or oats this helps to bind the pancakes more and adds fiber

Instructions

  • In a mixing bowl, mash banana with a fork until smooth and then whisk in egg.
  • Whisk in cashew flour, protein powder, baking powder, salt, and cinnamon until smooth.
  • Stir in strawberries.
  • Grease a pan with either butter, coconut oil, or avocado oil and pour ⅓ the batter over medium heat.
  • Cook pancake until slightly brown on each side, approximately 3 minutes each side.
  • Repeat cooking until 3 pancakes are cooked.
