- 1 ripe banana
- 1 tbsp cashew flour almond flour or keto pancake mix works too
- 1 large egg
- 1 serving vanilla protein powder
- ½ tsp cinnamon optional
- ¼ tsp baking powder
- ¼ tsp salt
- ¼ cup diced strawberries
Optional
- 2 tablespoons Psyllium husk or oats this helps to bind the pancakes more and adds fiber
In a mixing bowl, mash banana with a fork until smooth and then whisk in egg.
Whisk in cashew flour, protein powder, baking powder, salt, and cinnamon until smooth.
Stir in strawberries.
Grease a pan with either butter, coconut oil, or avocado oil and pour ⅓ the batter over medium heat.
Cook pancake until slightly brown on each side, approximately 3 minutes each side.
Repeat cooking until 3 pancakes are cooked.
