- 1 lb. chicken tenderloins diced
- 1 head bok choy about 3 cups, chopped
- 1 cup chopped celery
- 1 lemon, juiced
- 1 tsp fresh ginger
- 1 tsp minced garlic
- ¼ cup tamari or soy sauce
- 1 tbsp sesame seed oil
- ¼ cup chicken broth
- 1 package stir fry rice noodles
Bring a pot of water to a boil and cook noodles according to package.
In a large pan sauté garlic and chicken pieces with olive oil until chicken is fully cooked.
Add celery, bok choy, and broth. Cook for about 5 minutes or until celery and bok choy tender.
Stir in ginger, tamari, drained noodles, and the juice of 1 lemon.
Drizzle with sesame seed oil and a sprinkle of freshly ground pepper and serve!
