Healthy Shrimp Spaghetti Squash

This shrimp and brie combo is a healthy crowd pleaser dish

Ingredients

  • 1 large spaghetti squash
  • 1 bag frozen peeled shrimp
  • 8 oz. brie cheese
  • 1 can diced tomatoes
  • 1 cup sliced white mushrooms
  • 1 medium zucchini, sliced
  • 1 cup parmesan cheese
  • 1 tbsp minced garlic
  • 3 tbsp capers

Instructions

  • Cook spaghetti squash, shred and set aside. (I recommend microwave method)
  • Cut off brine from brie and cut into 1 inch pieces and place in a bowl with tomatoes.
  • In a large pan on medium heat, sauté garlic, shrimp, zucchini, and mushroom until shrimp is fully cooked.
  • Stir in spaghetti squash, brie, and tomatoes until brie fully melted.
  • Serve topped with salt, pepper, capers, and parmesan.
