    Air Fryer Stuffed Peppers (Mexican Filling)

    Stuffed peppers always look so delicious but for whatever reason they seem complicated to make.

    These air fryer stuffed peppers are actually so easy and just take a couple steps to make. My favorite *hack* is to make the rice in the rice cooker to make this even easier.

    If you don't have an air fryer you can just put these in the oven instead!

    Full of fiber and protein

    Naturally gluten-free

    Air Fryer Stuffed Peppers on a platter

    Ingredients for Air Fryer Stuffed Peppers:

    • 3 bell peppers
    • Ground Turkey
    • 1 can black beans
    • 1 can of rotel
    • Rice
    • Cumin
    • Chili powder
    • White wine vinegar
    • Shredded Mexican Cheese

    Substitutions:

    No rice? Use cooked quinoa instead

    No rotel? Try using a jar of salsa

    Want to add more vegetables? Add some corn or chopped zucchini

    Optional Toppings:

    • Hot sauce (like Cholula)
    • Salsa
    • Greek yogurt or sour cream
    • Avocado or guacamole
    • Fresh lime
    • Cilantro

     

    How to make stuffed peppers:

    The filling for stuffed Peppers

    1. Preheat air fryer to 350.
    2. Cut the tops off the bell peppers and scoop out the seeds.
    3. Cook ½ cup rice according to the instructions, I always just use the rice cooker.
    4. Brown 1 lb. ground turkey and stir in can of black beans, cooked rice, and can of rotel
    5. Stir in 1.5 tsp chili powder, 2 tsp cumin, ½ tsp salt and 1.5 tsp white wine vinegar.
    6. Stuff peppers with turkey filling and cook in air fryer for 12 minutes.
    7. Top each pepper with shredded cheese and air fry for an additional 3 minutes.

    Tips:

    • Keep bell peppers upright in air fryer to keep from spilling
    • Slightly push down on filling before adding cheese
    • Keep the bell pepper tops for serving to keep the filling warm when serving

    What to serve stuffed peppers with:

    Top with your favorite toppings are serve as is!

    To stick with the Southwest theme of these stuffer peppers you could serve with a side of tortilla chips, guacamole, and salsa

    A side of corn

    Cashew Cheese Sauce (Vegan Queso)

    Make these stuffed peppers paleo by using cauliflower rice instead of rice and using dairy free cheese.

    Equipment

    • Air Fryer

    Ingredients
      

    • 3 bell peppers any color
    • 1 lb ground turkey
    • 1 can black beans
    • 1 can rotel
    • ½ cup uncooked rice or 1.5 cups cooked
    • 1 ½ tsp chili powder
    • 2 tsp cumin
    • 1.5 tsp white wine vinegar
    • ½ cup shredded mexican cheese

    Instructions
     

    • Preheat air fryer to 350.
    • Cook ½ cup rice as instructed. (I always use the rice cooker!)
    • Cut tops of bell peppers off and set aside.
    • In a large pan on medium heat, brown turkey, and stir in beans, rotel, and rice.
    • Add chili powder, cumin, and cooked white wine vinegar and stir thoroughly.
    • Add turkey mixture to bell peppers and air fry for 12 minutes.
    • Top each bell pepper with shredded cheese and cook an additional 2 minutes.
