Salmon... the perfect "it feels fancy but really isn't" dinner recipe.
Let's hear it for sheet pan dinners! Once you learn to bake lime salmon you won't need to reference this recipe again.
This oven baked lime salmon recipe is made in 15 minutes and can be made year round.

What do you need:
- Salmon- I prefer skin on salmon filets
- Lime- fresh sliced lime
- optional to use lemon instead
- Grass-fed butter- This is a great healthy fat! It keeps you full longer and is my favorite type. I normally buy the 'kerrygold' brand.
- If you can't find grass-fed butter just make sure your butter does not have canola oil in it (this is very inflammatory).
- Some butter brands are sneaky and write "made with olive oil" but actually the main ingredient is canola oil (insert face palm.)
- Spices: such as paprika, salt, and pepper
Serve with:
To make a roasted vegetable along side the lime salmon filets, roast vegetables on a sheet pan for 15 minutes, then toss, and add salmon to sheet pan.
Cook vegetables and salmon for 10 minutes, then serve.
Oven-baked Vegetable Ideas: brussel sprouts, kale, butternut squash, sweet potato chunks. Any root vegetable with a longer cook time would be perfect.
How to make:

- Preheat oven to 400 degrees.
- Sprinkle salmon with seasoning.
- Add about ½ tablespoon of butter to each salmon slice.
- Top with lime slice.
- Bake lime salmon in oven for 10-12 minutes.
Over the Spoon for:
- anti-inflammatory Omega-3s AND healthy fats
- Gluten-free dinner
- Ready in 15 minutes
