    Edible Brownie Batter (High Protein!)

    This recipe for healthy edible brownie batter is such an easy and versatile dessert! It is naturally vegan, egg-free, soy-free, dairy-free aaaand still high in protein. WOW just full of all the buzz words.

    If you've ever heard of brownie hummus or cookie dough hummus, it is similar in the fact that it uses chickpeas as the base.

    Once you have the bases of brownie batter down, you can add any toppings you like. In this post I will show you how to make 2 Girl Scout Cookie Themed edible brownie batters.

    That's right, healthy Samoas and Thin Mints!

    What do you need:

    Let's start with the basics of this healthy edible brownie batter.

    • 1 can of chickpeas or garbanzo beans
    • Cacao Powder - While Cacao powder is similar to cocoa powder- cacao powder is full of great health benefits! It is full of flavonoids which can help reduce inflammation, lower blood pressure, and stabilize insulin.
    • Melted coconut oil or ghee
    • Coconut sugar - or sweetener of choice
    • Vanilla Extract
    • Salt
    • Almond Milk- or water
    • Mini Chocolate Chips

    Is this edible brownie batter healthy?

    Yes! Using coconut sugar is a natural, plant based sugar, with a little bit of fiber and is less likely to cause blood sugar spikes.

    Coconut oil and Ghee are a healthy fat to keep you full. Chickpeas are full of fiber and protein. Annnnd finally cacao powder is an awesome super food full of vitamins and minerals.

    How to make edible brownie batter:

    1. Rinse chickpeas in a strainer, 3 times, to thoroughly remove the "aquafaba" AKA chickpea...juice.
    2. In a small bowl, melt coconut oil or ghee by microwaving for about 30 seconds.
    3. Add chickpeas to a food processor along with all ingredients and blend.
    4. To get the right consistency, you can keep adding more water or almond milk.
    5. Serve topped with more chocolate chips.

    What do you serve this with:

    • To start, a spoon!
    • You could also dip strawberries in this or graham crackers.
    • Or try pudding some in a bowl with a touch of whipped cream.

    • Food Processor

    Ingredients
      

    • 1 can chickpeas
    • 4 tbsp cacao powder
    • 4 tbsp coconut sugar
    • 2 tbsp melted coconut oil
    • ¼ tsp salt
    • ½ tsp vanilla extract
    • ¼ tsp peppermint extract
    • ⅓ cup mini chocolate chips
    • 2 tbsp almond milk add more if needed for creamy consistency

    Instructions
     

    • Rinse chickpeas, 3 times before putting in food processor.
    • Melt coconut oil in a small dish for 30 seconds.
    • Add all ingredients to blender and blend until creamy.
    • Add more almond milk or water, as needed.
    • Top with more chocolate chips and garnish with fresh mint to serve.

    Notes

    Make sure to rinse chickpeas thoroughly to remove any flavor of chickpeas.
