Cilantro Lime Sauce is such an easy and healthy side or topping to make. It is naturally vegan and a great way to use fresh herbs, similar to a pesto but instead cilantro lime sauce or tacos.
What do you need:
- cilantro- fresh! about half a bunch.
- green onion
- olive oil
- red wine vinegar
- avocado: optional, but great addition to make it a vegan cilantro lime creamer
How to make this cilantro-lime sauce:
In a blender or food processor, simply blend all ingredients!
Tip: If you like a creamier cilantro lime sauce add ½ an avocado!

Another way to use this cilantro lime sauce is as a mayo free coleslaw dressing.
Simply mix the sauce with one bag of coleslaw mix
My favorite mixture is the "cruciferous crunch" mix from Trader Joe's, it contains chopped kale and brussel sprouts in addition to cabbage.
Any cabbage mixture would be great especially one with red cabbage included if you want to top have fish taco slaw.
Don't feel limited to just cabbage, shredded carrots would be great in this as well!
How long does it last?
I usually try and eat this within 3 days and I usually find it's best on day 2!

Cilantro Lime Sauce Recipe
- 1 cup fresh cilantro
- ¾ cup chopped green onion
- 2 limes, juiced
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- In a blender, blend together everything but coleslaw mix.
- Add salt and pepper to dressing, to taste.
For cilantro lime sauce over coleslaw
- Pour dressing over coleslaw and allow to marinade for at least 30 minutes before serving.
