This healthy chicken bok choy stir fry is inspired by the flavors of pancit noodles. Pancit is a Filipino noodle dish with lemon flavoring rather than a sweet flavor often found in a teriyaki stir fry.
I love that this stir fry is naturally gluten-free, full of vegetables, protein, and low sugar content.
It is very customizable depending on flavor preferences and what you have on hand!
What ever you do- don't skip the lemon. It adds such a fresh flavor and taste.
What do you need:
- 1 lb. chicken tenderloins
- 1 head bok choy
- 1 cup chopped celery
- 1 lemon
- ginger
- garlic
- tamari (or soy sauce)
- sesame seed oil
- chicken broth
- stir fry rice noodles
Substitions:
- If you want to make this chicken bok choy stir fry vegetarian- omit the chicken and use vegetable broth. Feel free to add more vegetables or protein of choice.
- To make this low-carb or keto I love to use shiritaki noodles.
- Shiritaki noodles are an awesome keto friendly option and require no cooking time! Simply add them to the stir fry after draining to heat them up.
- I buy wonder noodle Shiritaki Noodles from Thrive Market or I've seen various different brands in the grocery store.
- No bok choy? Use cabbage instead
- Looking to add more vegetables? Add some bell pepper, snap peas, or shredded carrots
How to make:
- Bring a pot of water to a boil and cook noodles according to package.
- In a large pan sauté garlic and chicken pieces with olive oil until chicken is fully cooked.
- Add celery, bok choy, and broth. Cook for about 5 minutes or until celery and bok choy tender.
- Stir in ginger, tamari, drained noodles, and the juice of 1 lemon.
- Drizzle with sesame seed oil and a sprinkle of freshly ground pepper and serve!
